Hi Karen,

It occurs to me that you could experiment using a mixture of ready ground almonds plus ones you grind yourself...the ready ground ones, not having their skins on, might make the cake a bit lighter. Mind you, the addition of the skins gives a lovely texture to the cake...and yes, it's very rich because of all those nuts ! So much calcium though too ! I think it would keep well and not go dry.

Hibernating!  Lots of family coming just after Christmas, but this year no worries about catering: nowadays I take up so much room with my wheely trolley I guess my kind off-spring will ban me from our small kitchen.

I cooked our turkey as per the cooking suggestion by Mary Berry in the Christmas supplement that came with Osteoporosis News - it was cooked to perfection and very moist. Thanks !

I came acrross this lovely recipe when looking to see who was on the forum a few nights back.(after midnight) I noticed someone was looking at the topic Christmas. So I decided to look on it too. Since then I have been thinking about this tasty torte. I'm at the very least going to write it out. It sounds so yummy. Thanx Annabel

Hope you enjoy it April.....I often make it for a dessert when we have guests so that I can have some too as it doesn't hurt my diabetes. It's very nutritious, full of protein and calcium with all those almonds I find it needs to cook at bit longer than the recipe says, but then my oven is a bit old !

I froze about half of the almond torte when I made it, & ate the last slice yesterday - still beautifully moist & oh so very delicious.
