| Is anyone doing anything nice this Christmas? It certainly looks like it's going to be a cold one, hopefully there will be a little snow.

| Hello James, what a nice message to read! Christmas for me will be with my family, Christmas Eve and Christmas Morning with my daughters and 19yr old granddaughter, which is always nice, and Christmas lunch with my sisters and family so I don't have to cook at all! For Christmas I, my husband and son will be at home and we're inviting over my brother, sister in law and nephew so there'll be the six of us. I always get our grocery shopping on line and I've already done most of my order for that Christmas week, including a free range turkey Because of my diabetes I cannot eat Christmas cake or pudding so I'm doing a very special, but easy, cake called Santiago Almond Torte, that I can eat which my husband - who's not diabetic - loves. It's made with a large quantity of almonds (no flour, so no carbs and no gluten either) and sweetened with xylitol. By happy coincidence the almonds are naturally high in calcium and the xylitol is both a sweetener diabetics can use and is helpful against osteoporosis ! Here's a link about xylitol and osteoporosis: http://www.vrp.com/articles.aspx?ProdID=art717&zTYPE=2 My husband loves the taste of xylitol as it's sweeter than sugar, unfortunately it's quite expensive so making a cake from it is a treat.
Here's the recipe if anyone is interested:
For torte:
• 300g almonds with their little brown skins still on
• 4 eggs separated
• 180g xylitol
• grated zest of 1 lemon and 1 tbsp juice
• 1 tsp ground cinnamon
For syrup:
• thinly sliced zest and juice of 1 lemon
• 25g xylitol
1 - Preheat oven to 180 C, gas mark 4. Grease a 20cm round loose bottomed cake tin and line base with baking parchment. Place almonds in food processor and grind very finely.
2 - Place egg yolks, xylitol, lemon zest and juice in large bowl and whisk until mixture becomes thick and creamy. Mix in the ground almonds and cinnamon.
3 - Whisk egg whites until they form stiff peaks and fold into the almond mixture. Pour into the cake tin and cook for 45 minutes or until skewer comes out clean. Leave to cool in the tin.
4 - Whist the cake is cooling, make the syrup. Place the lemon zest with the juice, xylitol and 1 tablespoon of cold water in a small saucepan and heat gently until the xylitol is dissolved. Spoon the warm syrup over the top of the torte. When it's all cold take out of tin and place on plate - you can serve it with thick cream

| I'll be spending time with family also, then I'm off on holiday on New Year's Day. It's not looking too good for snow at the moment, given the amount of rain!

| Anne, that recipe sounds wonderful & I think I'll try it. I've never had that sweetener, but if it's hard to get I might try using sugar.

Daphne - I find xylitol in health food shops.
Karen - the original recipe uses caster sugar (250g of it for the cake and 25g for the syrup) so it won't go wrong using sugar...other than that the recipe is exactly the same

| I made the cake this afternoon Anne, & although it took longer to cook, & I took it out of the tin before it was fully cool & before I'd poured the syrup on top( it broke a bit round the edges), it tastes delicious. I don't think I ground the almonds fine enough though, & as I also used 4 extra large eggs (all I had left) I think that's why it took longer to cook. It's very rich, & would easily give 12 slices. Thanks so much for the recipe.
